Baked Sweet Potato Wedges

Here’s an easy way to make a tasty side dish out of a common item found in your Groceries for Seniors bag:

Ingredients (from Groceries for Seniors bag)

2 large sweet potatoes

Ingredients (you may have in your kitchen)

2 ½ tablespoons olive or vegetable oil

½ teaspoon pepper

1 ½ teaspoons salt

1 teaspoon sugar

1 tablespoon Italian seasoning

Cooking utensils required:

1 mixing bowl

1 baking sheet

Aluminum foil

Instructions

Preheat your oven to 450 degrees.

Line your baking sheet with aluminum foil and put it aside.

Peel the sweet potatoes and cut off the ends. Slice the sweet potatoes in half and then into length-wise wedges.

Put the cut sweet potatoes in your mixing bowl. Drizzle with oil, and evenly add the salt, sugar, seasoning and pepper. Mix with a spoon making sure to coat all the sweet potatoes wedges evenly.

Arrange the sweet potato wedges on the foil lined baking sheet. Bake for 30 minutes and test for crispiness. If you wish your wedges a little crispier, continue to bake for another 3-5 minutes.

Pull from the oven and let cool for 5 minutes before eating.
