Vegetable Noodle Soup

Here’s a hearty soup that can be created from elements Groceries for Seniors often includes in our bags:

Ingredients (from Groceries for Seniors bag)

1 package noodle pasta (spaghetti style or the short elbow variety)

2 medium onions

2 carrots

3 stalks of celery

2 potatoes

1 can of vegetables (either green beans or mixed vegetables) - optional
Ingredients (you may have in your kitchen)

2 teaspoons soy sauce

½ teaspoon pepper

1 teaspoon salt

8 cups water (this varies depending on cooking pot size)

1 bay leaf (for seasoning only)
Cooking utensils required:

1 large cooking pot

Chop and prepare the onions, carrots, celery and potatoes. You may choose to peel the potatoes before adding them to the soup. If you leave the peels on, be sure to scrub the potatoes under water first. Put the prepared vegetables in your cooking pot.
Now add the water and additional ingredients (except the noodles). Bring to a boil.
Add noodles, return to a boil. Reduce heat, cover and simmer for 10-12 minutes or until both the noodles and vegetables are tender, stirring occasionally. (Potatoes may take a little longer, depending on how small or thin they were chopped).
Serve hot and enjoy.
